Meet Chef Ignazio “Chef Iggy”
Chef Ignazio Sessa, known to guests as “Chef Iggy”, brings decades of culinary passion to the Omelette Cafe kitchen.
Originally from Chicago, Chef Iggy has called Las Vegas home for more than 20 years. Cooking runs deep in his family, with generations of cooks and chefs who have dedicated their lives to the restaurant industry.
Inspired by this heritage, Chef Iggy built his career around creating meals that combine traditional comfort food with the welcoming spirit of neighborhood dining.
As the owner and operator of two Las Vegas restaurants, he takes pride in crafting dishes that bring people together around the table. For Chef Iggy, cooking is more than a profession — it’s a lifelong passion that guests can taste in every plate served.
Meet Annamaria Sessa
Behind the scenes and often greeting guests in person is Annamaria Sessa, co-owner and an essential part of the Omelette Cafe family.
Annamaria shares the same dedication to hospitality and quality that defines the restaurant. In addition to helping manage the family’s restaurants, she balances the responsibilities of running a business while raising their three children, bringing warmth and care into every aspect of the restaurant experience.
Guests frequently see Annamaria working alongside the team, ensuring that every visitor feels welcomed and every meal is served with attention and care.
Meet Francesco
As the son of Ignazio and Annamarie Sessa, Francesco Sessa was born into the restaurant industry and developed a passion for hospitality and operations from a young age. After graduating from Dominican University in Chicago, Francesco moved back to Las Vegas in 2022 and immediately became hands-on in the family business. Today, he is the owner and operator of the Omelette Cafe Flamingo location while also helping operate the family’s two other breakfast locations. With a strong focus on customer service, team culture, and growth, Francesco is committed to continuing the family legacy while bringing a new generation of energy and leadership to the Las Vegas dining scene.
